The sun’s out and it feels like the perfect time for an easy yet delicious summery pudding. Winchester-based cookbook author and mother of three, Georgina Fuggle has given us the perfect recipe. What’s even better is that you can put the children in charge of making this one.

Frozen Eton Mess

Serves 8


250ml good quality, ready-made custard

250g frozen summer berries

2 tablespoons cassis, optional

To Serve

3 x large meringues or 150g mini meringues

300g strawberries, cut in half

Fresh mint or basil leaves, to garnish

Get all the components of this pudding ready beforehand, once the berry ice cream is made, it’s a serve immediately kind-of-dish.

If using large meringues, crush them into small, bite-sized pieces. If using small, leave them as they are. Set the meringue aside with the fresh strawberries.

Empty the frozen berries into the bowl of a food processor and add the custard and cassis, if using. Blend until you have an instant, soft-serve ice cream.

Pile the ice cream into a large mixing bowl with ¾ of the strawberries and ¾ of the crushed meringue. Mix sparingly and quickly until all is roughly combined, you’re not looking for a uniform puree.

Pile into a serving dish and garnish with the remaining strawberries, meringue and a fresh herb or two.
